Pecan Pie Banana Pudding

A few years ago I started making my own custard pudding for a recipe similar to the standard banana pudding recipe --but I have to say I like this one so much better.


Here it is on the stove top. You start with simple ingredients.
Whisk together 3/4 cup sugar, 1/4 cup cornstarch, 3 1/2 cups milk & 3 egg yolks in medium saucepan until well blended. Bring to boil over medium heat, whisking constantly for 1 minute. Remove from heat and stir in 1/2 tsp. vanilla and 2 Tlb, butter.


Thaw pie at room temp. 2 hrs. and then cut pie into 1/2 inch cubes.


You will need vanilla wafers and 3 bananas.


Spoon one quarter of the custard into a 2 quart trifle dish or bowl. Slice 1 banana and layer over the custard. Top with half of the pecan pic chunks.



Repeat procedure with one quarter custard and 1 banana. Top with vanilla wafers.



Repeat again with one-quarter custard, remaining banana and remaining pie chunks.







Top with remaining with remaining custard. Cover and chill at least two hours.






Top with whipped topping just before serving. Serves 8- 10.

This is wonderful! I just love it! I love to have puddings at some of my Tea's. This is a great spin on a custard! Just love it!

Good Morning Rose,
I could absolutely eat the whole thing,and probably would. I love banana pudding in any form. The restaurant we go to serves it hot. yum! I keep telling my dh that one day I will make one and sit down and eat the whole thing. lol. this looks so delicious.

I want to comment on you previous posts, if you are like me I don't go back and look at comments once I have posted again.

The tea was beautiful and to be able to share with the girls, and CeeKay was especially nice. I love tea rooms, we have a a few around here, but don't get to go as often as I like.Your granddaughters are so beautiful, they remind me of Ours, so prim and proper. Rose, taking them to this tea room, will be one of the memories in their live that they will always cherish.
The Easter post with your grandchildren I also enjoyed very much. How blessed they and you all are. Enjoy! Enjoy!
